Lemon Blueberry Protein Pancakes!




So, I know what some of you may be thinking, protein pancakes? They will either make you huge like Arnold Schwarzenegger, or for the more informed, they’ll taste like sh!z. Well, you’d be wrong for both! Protein is absolutely crucial in repairing the body, maintaining or gaining muscle mass. It’s really common for women to hesitantly tell me they don’t want to have protein because they don’t want to ‘jacked’. First of all, protein isn’t restricted to powders. ANY completed chain of amino acids would be considered protein. This could be but not limited to, protein powder, eggs, lean meats, a compilation of nuts legumes, etc. Secondly, ladies -- women have 30% less testosterone than men, which means if men have enough difficulty adding muscle mass *naturally*, you’re sure not going to bulk up like a greasy banana hammock wearing stereotype, by accident! And third - these pancakes are delicious AF, and you will thank me later when you’re not starving by 10am from having only eaten a slice of toast with your coffee *EPIC EYE ROLL*.

Ingredients

  • 1 organic lemon

  • ½ cup frozen organic blueberries (Costco has the hook up, trust me)

  • 1 scoop protein powder (while I am not a vegan I’m currently into Vega as I like the texture and the fact its not too too sweet, however whatever you prefer)

  • 1/3 Cup egg whites

  • 1-2 TBSP agave or maple syrup or honey, whichever you like or have

  • 1 TBSP hemp hearts

  • 1 TBSP milled flax

  • 2-3 TBSP coconut yogurt (@enjoyyoso) or plain greek yogurt

  • Coconut oil or Ghee


How to…


- whisk together egg whites, 1 scoop protein powder ground flax, 1/2 a lemon zest & juice, then let sit for 5 mins (you want your mixture a lil runny but still dense)






- in nonstick pan on medium heat, use coconut oil or ghee to grease your pan, then make pancakes roughly the size of your hand. This will make them easier to cook & flip. The trick to protein pancakes or waffles is not over cooking them. Quick Tip: When your pancakes start to bubble, flip over and let them cook for 10-25secs!

























Toppings!

- in a small pot or sauce pan, 1 tsp coconut oil, 2 TBSP agave or maple syrup, remaining half of lemon & zest and throw in a handful of frozen blueberries! Simmer for a few minutes then drizzle on your delightful stack and top with your fave yogurt @enjoyyoso, coconut yogurt! And sprinkle with hemp hearts!



Eating well doesn't have to suck, lack of interest in your health surely does!
